Description
Louis and Charlotte Pérot run one of the most important and excellent young domaines in the south of France. Their wines are always clean, correct and quaffable with unique takes on the well established terroir of Cahors. The soils are heavy clay, rich in iron deposits and a sub soil of limestone rock. They are a brilliant example of building on tradition with clear direction and concept. They predominantly work with Côt (malbec) – the key varietal of the region – but also work with chenin blanc, pinot noir, merlot and hybrids which give their wines a unique stylistic range.
Hilarius in 2020 was solely from carbonic fermented malbec with light, bright fruit and very delicate tannins whereas in 2021 Louis and Charlotte opted for a type of field blend comprised of malbec, merlot, pinot noir, hybrids and few other varietals. The result is a darker, more complex blending of flavours, favouring darker plum and bramble berries with slightly stickier tannins while still maintaining trademark bright acidity and relatively light body.
