Description:
From the highly regarded and certified-Biodynamic Moon Vineyard on the banks of the Goulburn River in Nagambie, operated by Greta Moon and Mike Boudry.
Originally a vineyard and winery as far back as the 1860s, Greta bought this property in 1992 and began replanting the site, and started implementing organic and biodynamic practices in 2005. In the past few years, Greta and Mike have started making a portion of their wine without any additions, and the results have been exceptional.
2024 is a low-yielding and concentrated vintage. This was made from 100% syrah, entirely in tank, and saw an extended period of lees contact, resulting in a style which is very nicely textural and creamy.
Pristine in terms of both fruit quality and vinification, this is highly recommended for fans of generous, old-school Australian rosé.

Producer: Sylvain Saux
Vintage: 2009, 2010
Variety: Chardonnay, Chenin Blanc, Mauzac
Country: France
Region: Roussillon
Terroir: Calcareous
Farming: Organic
Fining/Filtration: None
Added SO2: None
ABV: 13.5%
Description:
Incredibly enigmatic wines from the heart of Limoux, Sylvain's wines simply demand time in bottle to find harmony.
Beautifully farmed on calcareous soil, Sylvain's white wines see plenty of oxygen and this multi-vintage blend of chenin blanc, chardonnay and mauzac, now 16 years old, is resolved and crystalline and sits nicely in the realm of a young fino.
The core of direct, mid-palate acidity is striking and clearly soil derived, and a lip-smacking lick of salinity moves this directly into hot afternoon, plate of roasted and salted almonds territory.
European hake in green sauce from a highly regarded conservas producer based in the Basque Country, specialising in hand-prepared, small-batch tinned fish, using only the finest sustainably sourced ingredients and time-honoured methods. Founded by chef Xabier Urtasun.
Contains European hake and hake broth, onion, olive oil, garlic, parsley and salt — no other additives.
