We’ve recently received a selection of 2021 wines from Adelaide Hills star Travis Tausend, which we’re pleased to say are all really singing.
Sea Bass is direct-press sauvignon blanc, which has seen some time on lees, some time in barrel, and some time in bottle. It’s been picked at a very satisfying stage of physiological ripeness, with a nice balance between ripeness and tension, and today is tasting very resolved, with citrus fruit, fresh acidity, very subtle grassiness and some soft creaminess from the lees. It’s delicate but focussed and precise, and pristine both aromatically and on the palate.
