Description:
Excellent traditional-method sparkling chardonnay.
Niki and Tim’s winery is in Timboon, southwestern Victoria, but the pair also work with some other top-quality vineyards around the state. The fruit for this wine comes from a certified Biodynamic site in the Goulburn valley – the exceptional Moon vineyard managed by Mike Boudry. The fruit was very gently pressed before fermentation and spent 6 months on lees before being bottled without dosage.
Picked a little earlier with lower alcohols, the final wine is light-to-medium bodied and lively in texture, with lovely cider apple and citrus pith layered with classic yeasty autolytic character.
