Description:
An excellent young ancestral-method sparkling chardonnay.
Niki and Tim’s winery is in Timboon, southwestern Victoria, but the pair also work with some other top-quality vineyards around the state. In 2025 the fruit for this wine came from the Moon vineyard in Goulburn, but in 2026 was sourced from the Landsborough Valley vineyard in the Pyrenees, a certified organic site planted in the early 2000s over clay, sandstone and quartz.
The fruit was very gently pressed before fermentation and spent 6 months on lees before being disgorged without dosage. Picked a little earlier with lower alcohols, the final wine is light-to-medium bodied and lively in texture, with lovely cider apple and citrus pith layered with nougat-y autolytic character.
