Description

In 2002 , Luis Perez, a professor of oenology and experienced winemaker, established Bodegas Luis Pérez near his home in Andalucia to resist the homogeneity that came with large-scale Sherry production during the last 50 years and to offer a glimpse into the past where the characteristics of each grape growing area (Pago) could endow the resultant wine with its own identity.

The Palomino grapes destined for the Palma Caberrubia Saca VII were carefully selected from already low-yielding, 40+-year-old bush vines grown in the hard chalky (Albariza) soils of the revered Carrascal vineyard area north of the town of Jerez de la Frontera, in the heart of Marco de Jerez.

The fruit was laid out to dry in the sun for more than a day to concentrate the sugars and increase the potential for alcohol production before pressing and fermentation in oak barrels. This process allows the wine to achieve the required 15% alcohol without the need for fortification with grape spirit from outside of the region.

Blended from three vintages (2017/ 2018/ 2019), this fino is made as it would have been over a century ago. In the glass, it is a concentrated, rich and round yet supremely elegant and dry wine, with layers of savoury, saline, oxidative, flor-derived flavour. Savour this with fried or roasted white meats, crustaceans prepared in any manner or intensely flavoured cheeses.
