Really excellent, concentrated and fruity sparkling chardonnay from Domaine Nøvice in Poligny, Jura.
Yves Roy-Salomon established the domaine in 2019 following the acquisition of his own old-vine parcels in 2014 and a number of years working for Valentin Morel at Les Pieds sur Terre. This is a relatively young project but one that is founded on really spectacular, well-established parcels in the area, and is currently producing some of our very favourite wines in the region.
