Description:

An exciting addition to the fridges from a big name in Chateau Chalon!

François Rousset-Martin officially took on this estate in 2006, originally begun by his great-grandfather René. The family has a total of 14 acres around Nevy-sur-Seille, a village in the Vallée des Reculées. Half of the vineyards sit within Chateau Chalon, and some of the fruit is sold to a local co-op.

He makes wine in four different cellars with different ambient temperatures and humidity – one better suited for oxidative wines, another better suited to the topped up (ouillé) cuvees, another for the wine he ferments in steel tanks and also one for bottle storage.

This cuvee is 100% savagnin which was aged for four years under flor in an untopped barrel, resulting in a profoundly deep and powerful white wine with concentrated fruit, abundant acidity and lots of saline nutty complexity.
