Description:

Since 2017, young grower Jacopo Stigliano has farmed around three hectares of old vines planted over clay and limestone in Valsamoggia – a picturesque valley that lies between Bologna and Modena. Originally from Bologna, Jacopo is passionate about restoring abandoned vineyards and is an enthusiastic champion of vineyard biodiversity. His parcels are home to over twenty grape varieties and grow among walnuts, cherry and plum trees, with the oldest vines over a hundred years of age. All grapes are harvested, fermented and aged together, paying respect to the Italian tradition of the field blend.

Papillon comes from trebbiano, albana, grechetto and other white varieties, which were macerated together for one day before being pressed off to vats for primary fermentation. The wine was eventually re-fermented in bottle using a little grape must from the same site, resulting in a straw-coloured pet nat which is relatively classical in style with delicate floral and leesy aromatics and invigorating citrus fruit. A brilliant aperitif!
