Description
From former-sommelier, Georgian wine importer and winemaker Tim Stock (also known as Les Fruits) this was made in collaboration with now-retired Saint Aubin vigneron Jean Jacques Morel.
The Les Fruits project sees Tim working with a number of organic and biodynamic vineyards throughout the Adelaide Hills, Barossa and McLaren Vale to craft an extensive range of wines. Ruby comes from one of the Vale’s rare parcels of organic cinsault vines, farmed by Brad Hickey.
The fruit here was destemmed and macerated for 4 days before being pressed to barrel for fermentation and a short period of elevage.
A delicately-extracted and very light-bodied style, this is gently saline with pretty red fruit and super fine and polished structure, making it a suitable choice for the fridge.
