From the ever-impressive Kyatt Dixon and his team. Dry-grown cabernet sauvignon from a parched north facing sandy hill 5km south of Mt Gambier.
This is pale pink, crystalline and delicate, with a nose of peppery varietal leaves and spices and some delicious, lightly candied berry fruit. On the palate it’s brisk, dry, savoury and thrillingly spice-laden, with a world of flavours that would do very nicely with a plate of crisp, crunchy radishes and other crudités.
