Description:
The first vintage of High Paradise since 2019!
Tim and Mon create some of our favourite wines in the country every year. Their 25 acre property in the Forest Range is perched on an ancient ridge with an abundance of schist and mica and, as a result, their wines often have a captivating notion of depth and minerality.
This was made from chardonnay and savagnin with a mixture of early-picked and fully ripened fruit, a portion of which was macerated. The fruit was grown on red clay over slate and siltstone with a predominance of iron stone quartz, and was eventually run to barrel for elevage.
2023 is already proving to be a great year for Tim and Mon with all the wines fruity, taut and mineral, singing of healthy fermentations and perfect physiological ripeness.
