Description
Macerated savagnin from one of France’s most exciting young talents.
While still a rising star in the Jura, Nicolas Jacob is already among the region’s brightest and most celebrated growers and winemakers. With a background in organic vegetable farming, Nicolas’ transition into wine came via tenure at Domaine Macle in Chateau Chalon, followed by an apprenticeship under Jean-Francois Ganevat, under whom he worked in both the vineyards and winery as Jean-Francois’ right-hand-man. In 2015, at the age of 25, he started his own domaine with the purchase of just over one hectare in L’Etoile.
Today, Nicolas farms a little over six hectares spread across a number of parcels, where he grows chardonnay, savagnin, pinot noir, trousseau and poulsard, and operates his winery and cellar beneath his house in Cesancey.
For his whites, Nicolas uses old barrels for fermentation and elevage, routinely topping up his barrels to make a less-oxidative “ouillé” style of wine. The reds are fully destemmed and vinified in a combination of fibreglass and old barrel.
It’s a pleasure to have a few of these in the building, although we’ve received them in miniscule quantities (in some cases, one bottle per cuvee) so be quick!
