Description:

Living and working in the commune of St Georges des 7 Voies, Sylvain farms a couple of small parcels very close to the southern bank of the Loire River and about half an hour east of Angers. He produces wine from chenin blanc, gamay, grolleau, grolleau gris and pineau d'aunis. For the most part, chenin is grown on classic, black Anjou schist while the reds grow on finer, sandier soil.

Sylvain’s winemaking is done very simply in a cold, rented winery near his home, and the winemaking is very traditional. Everything goes into barrel, and the wines as a result tend to have a very fine, resolved structure. The reds are always very aromatic, earthen and peppery (in part, from the sandy soils) with a core of minerality that is accentuated by lengthier macerations.

Rosabul is Sylvain’s sparkling rosé made from a blend of his three red varieties – gamay, grolleau and pineau d’aunis. Made in a petillant naturel style and disgorged prior to release, the final wine is dry, mineral and very pale, with a delicate suggestion of spicy pineau d’aunis fruit, the taut acidic structure of gamay and the earthy restraint of grolleau. This is sublime in 2022 and we simply could not think of any better way to start a meal than with a bottle of this served straight out of the fridge.
