Description:
An extraordinary collector’s item from a now-ended project.
Based on an old Quebecois style of cider, Catherine and Manu made this by taking a 40% portion of the apple juice into their home kitchen and heavily reducing it over the stove (adding additional flavour and of course concentrating acidity and sugar) before blending it with fresh apple juice from the same orchard. The blend began ferment in tank and then was run to bottle to finish fermentation, resulting in a rich, off-dry sparkling cider with perfectly balancing acidity and a very distinctive brûlée character, with flavours not unlike tart tatin.
Truly singular, unforgettable as an accompaniment to any sort of food, and now in very short supply.
