Description:
Chardonnay from Axel’s vineyard, dotted with large limestone rocks, and some Clairette he sourced from another organic producer. The grapes were macerated for five days before being pressed off to tank for fermentation and elevage, and finished primary fermentation in bottle, resulting in a light, saline and delicious sparkling wine.
Axel’s vineyard and winery are situated in a remote, thick forest in the mountains north of Beziers. He produces very small quantities of red wine, and even smaller quantities of white.
